Tofu “Caprese” Salad with Marukome Miso

You might think it a strange combo to bring miso into the classic tomato and basil duo. However, Miso & Easy adds umami to this recipe in subtle but apparent ways, mellowing the blue cheese and carrying out fuller flavors in the tomato basil.

TOMATOES, BASIL, AND MISO


Ingredients

14 oz. (315g) Tofu, Medium firm 3 oz. (85g) Blue Cheese, such as Roquefort or Gorgonzola 1 tomato, cut into bite-size pieces 1 bunch fresh basil For Dressing

2 Tbsp. Miso & Easy 2 Tbsp. pesto sauce


Directions

STEP ONE

Mix all dressing ingredients in a bowl. Set aside.


STEP TWO

Wrap tofu with a paper towel to remove any excess water. Tear into bite-size pieces by hand. Place onto a serving plate.


STEP THREE

Crumble Blue Cheese by hand over tofu. Add tomato to the plate, and top with basil leaves. Drizzle dressing over and serve immediately.
