Japanese Potato Salad

Japanese potato salad is another east-meets-west favorite that offers a twist that regular American potato salad doesn’t have.

The addition of crunchy cucumbers and carrots give this creamy potato salad an extra texture of crunch that makes it fun to eat. It’s also very simple to make and we’ve got this recipe from JustOneCookbook.com.
