Made these at home last weekend and the trickiest part was getting the shrimp tempura crispy enough to hold up inside the roll. Two tips that helped me: pat the shrimp really dry before battering, and use ice-cold water in the batter so it fries up light. The avocado on top is what makes it look fancy, but slicing it thin and fanning it out takes some patience.
